Shrimp Sweet Potato Cakes
In a food processor, add 2/3 of shrimp & the lime zest, pulse until a paste. Transfer shrimp paste to a bowl, add the remaining shrimp chopped, sweet potatoes, red bell pepper, green onions, jalapeno, cilantro, garlic and salt. Form 6 patties from the shrimp & sweet potato mixture.
In a saute pan, heat a thin layer of vegetable oil over medium heat. Add shrimp cakes & cook for about 2-3 minutes until the bottoms have become golden & crispy. Flip cakes & cook another few minutes until the second side is also golden & crispy & the shrimp is cooked to pink. Serve with chopped avocado and tomatoes on top (optional).
