Shrimp, Sausage & Squash Casserole


Preheat oven to 350 F. Cook bacon and sausage in a large pot. When fat renders, add onion. Sauté until bacon is slightly crispy, sausage is crumbled and cooked, and onion is soft. Add sliced squash and stir. Turn the heat to high. Squash is done once it is slightly browned. Season with your choice of seasonings, salt and pepper. Remove pot from stove and let cool slightly. Beat eggs in a small bowl and pour over mixture. Add raw shrimp and 1-2 handfuls of grated Parmesan cheese. Stir and pour into casserole dish. Top with a few pats of butter and bake until bubbly, approx. 30 min.
