Louisiana Collard Greens

Directions:

Wash greens and remove any tough stems.  Cut up, and put greens and onion in a deep pot. Rinse ham hock and add it to the pot along with salt and red pepper.Add just enough water to cover greens, then cook until tender (about an hour). Season to taste.

Goes great with corn bread and a sliced Louisiana tomato. Serves 4-6.
